Turkey Leftover Recipe

Happy Thanksgiving from all of us here at "Politics, Culture and Other Wastes of Time." Well, the staff is just me though Terry Williams of Danville, Va., occasionally helps me post Youtube videos. We just posted a video this week that my friend Chris Knight of Reidsville, NC, filmed as a satire of "The Sopranos" (before he became a household name in the area) for his Star Wars-themed campaign ad when he ran for the Rockingham County School Board last year. The ad was recently featured on the E! television series "Talk Soup."

I had also hoped to post a scene from the 1950s Turkish cult movie "Drakula Istanbulda/Dracula in Istanbul," but I couldn't find the darn clip. Perhaps, it was a copyright thing............

This brings us to today's Thanksgiving leftover recipe which was written by Erica Derr who writes for the Greensboro, NC-based publication "Our State." This recipe was published in the November issue of that magazine, which is also the basis for a local public tv show of the same name.

The recipe is for Turkey Rice Soup. Hopefully, I will have this typed up before my mother gets here and interupts me!

Turkey Rice Soup:

1 cup chooped onion

1 cup chopped celery

1/2 cup sliced carrots

3 1/3 quarts of water

3 cups of leftover turkey

1 cup bron rice, uncooked

1/2 tablespoon celery salt

2 cups of chicken broth

1 tablespoon parsley

1 avocado, peeled and diced

Combine all the ingredients except for avocado in a slow cooker. Cook on medium for 8 hours. Ladle soup into bowls, and add avocado chunks to soup just before serving. Serves 6 to 8.

In the same issue, culinary connosieur Bob Garner wrote about the delicacies of country-style steak. He recommended Simmons Soul Food Restaurant on 516 North Graham Stree in Charlotte (Phone: 704.334.6640) and the Riverside Restaurant in the town of Hillsborough, some 10 miles north of Chapel Hill, (Phone: 919.245.3663) as two of the best places in the Tarheel State to find the trademark Southern dish.

Garner wrote that Riverside has no trace of commercial gravy (whatever that is) in its country-style steak dishes.
